2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons butter
¼ cup applesauce
1 cup sugar
1 tablespoon honey
¾ cup mashed banana (about two small)
¼ cup milk
1 egg
1 teaspoon vanilla
½ cup walnuts, finely chopped (you may substitute chocolate or peanut butter chips for the nuts)
Preheat oven to 350 degrees. In a medium bowl,
stir together flour, baking soda, baking powder and salt and set aside. In a
larger bowl, cream together butter, applesauce honey and sugar. Gradually add
flour mixture, followed by mashed banana, milk, egg and vanilla. Stir in
walnuts.
Using your cookie scoop drop
mounded tablespoons of batter unto a parchment lined cookie sheet leaving 1 1/2
to 2 inches space between each mound. Bake
for 12 minutes, or until edges begin to brown, remove from oven and let cool
completely.
Filling can range from peanut butter to
chocolate frosting, for mine I used cream cheese frosting and refrigerated the
pies immediately after assembling.
Yields 15 assembled whoopee pies (30
individual cakes).
