Michelle's Hot and Sassy Nuts

2 C. unsalted mixed nuts
1/2 C. Pure Maple Syrup
1/4 t. Cayenne Pepper
1/2 t. Sea salt
1 t. pure maple extract

Combine Maple Syrup, Cayenne pepper, and salt in a heavy skillet on Medium heat.  Stir in nuts.  Keep the nuts moving because they will scotch.  The Maple syrup will eventually crystallize (in about 4 minutes).  Once  you no longer have liquid in the pan add the maple extract and keep stirring.  Pour immediately into a shallow pan or cookie sheet to cool.  Cool completely. 



Note:  As a nice hostess gift mix in some dried fruit and place in a small jar or tin.
