Vanilla Cupcake


Vanilla Cupcakes  (makes 2 doz.)
2 c. Flour

1 ½ c sugar

3 tsp. Baking powder

½ c. butter

1 c. 2% milk

1 Tsp. Vanilla

2 large eggs

Preheat oven to 35 degrees.  Combine dry ingredients in a medium mixing bowl; add butter,  milk, and vanilla- mix with electric mixer for about 2 min on low speed to avoid a floury mess.  Add eggs all at one and increase mixer speed to medium high and mix for about 1 minute, or until the batter is smooth and fluffy.  Using an ice cream scoop fill lined cupcakes 1/3 full.  Bake for 12 to 14 minutes or until the cake springs back.  Allow to cool completely before attempting to core and fill.
